Ingredients:
500g sugar
60ml brown malt vinegar
250ml water
Method:
Add the sugar, water and vinegar to a saucepan and stir over low heat until the sugar dissolves. Increase the heat and bring to a boil. Boil rapidly for 15 minutes, or until a small amount, when poured into cold water, will crack.
Remove from the heat and immediately stand the saucepan in a bath of cold water for 1 minute. Remove from the water bath, allow any bubbles to subside then pour into paper cupcake cases. You can leave plain or decorate with coconut, hundreds and thousands, chopped candied peel etc.
