Sauce Tomate (Tomato Sauce)

Sauce Tomate (Tomato Sauce) is a traditional French recipe for a classic rich tomato-based sauce with onions, red bell peppers, garlic, brown sugar, Dijon mustard, Worcestershire sauce cooked in a wine or sherry base. Tomato sauce is one of the five Sauces Mères (Mother Sauces) as defined by Auguste Escoffier.

Ingredients:

1 tbsp olive oil
3 onions, chopped
3 small red bell peppers, chopped
3 ripe tomatoes, blanched, peeled, de-seeded and chopped
2 garlic cloves, minced
3 tbsp tomato purée
2 tsp soft brown sugar
2 tsp Worcestershire sauce
juice of 1/2 lemon
1/2 tsp Dijon mustard
generous pinch of cayenne pepper
120ml wine or sherry
salt, to taste

Method:

Add the oil to a pan and use to fry the onions, bell peppers, tomatoes and garlic for about 10 minutes. Allow to cool then put in a blender along with the wine and render to a smooth purée.

Return to a pan, add the remaining ingredients and heat through until the sauce thickens (do not allow to boil). Allow to cool before serving.

This is an excellent Mediterranean-influenced sauce to accompany white meat and fish.
