Whey is a critical component in many Eastern European recipes. Essentially this is a method of souring milk so that the solids come out as curds (which can be made into curd cheeses or flavoured with herbs and/or flowers to serve as a dip).

Ingredients:

1.5l milk
3 tbsp vinegar (or lemon juice)

Method:

Combine the milk and lemon juice (or vinegar) in a large pan over low heat. Cook, without boiling, until the mixture curdles (separates into curds and whey) then take off the heat and pour into a fine-meshed sieve lined with muslin (or cheesecloth). Allow the liquid (the whey) to drain into a bowl. This recipe will give you about 1l of whey.

Don't forget the solids left in the sieve (the curds). You can eat this directly on toast with chives as a snack or breakfast, you can turn into a dip or you can use the curds as the basis of the Indian cheese, paneer.
