Pronounced chow min this is the Surinamese version of Chowmein and it was introduced to Surinamese society between 1858 and 1875 by the wave of Chinese immigrants. This tasty dish has become one of Suriname’s best and most popular meals. Cha Siu meat would be appropriate for this dish.
Cook the noodles according to their packet instructions. Once cooked, rinse with cold water, drain and toss with a little oil to prevent sticking.
Take a small portion of the roast meat and cut into small pieces. Slice the remainder and set aside to keep warm as a topping.
Place a wok over high heat. Add the oil and use to fry the onion and garlic for 4 minutes then add in the finely diced meat. Now add in the sliced fachong sausage. Crumble in the maggi cubes then add the sugar, trassie trefasie and soy sauce.
Add the cooked rice noodles and toss to combine with the other ingredients.
Now add in the mustard greens and toss for a few minutes to stir fry.
Turn the tjaw min onto a warmed plate, top with the sliced meat and serve.
