Tiramisu is a traditional Italian recipe for the classic dessert, Tiramisu. Here pan di spagna is used as the base and the traditional espresso coffee and Marsala wine are used as the flavourings. The full recipe is presented here and I hope you enjoy this classic Italian version of Tiramisu.

This is one version of the classic Italian Tiramisu (though my personal favourite is the Coffee and Chocolate Tiramisu. You can either do this 'properly' by creating your own Pan di Spagna as the base or you can buy ready-made sponge fingers.
Ingredients:
Pan di Spagna or 20 sponge fingers
100ml strong espresso coffee
4 eggs, separated
3 tbsp caster sugar
400g (13oz) mascarpone cheese (or use this site's recipe for home-made mascarpone)
3 tbsp Cognac or Marsala
2–3 tbsp bitter cocoa powder
Method:
For the Filling: Mix together the weak coffee and the liqueur. Cut the Pan di Spagna into about 20 strips about 2cm deep, 3cm wide and 8cm long. Layer these in a serving dish and drizzle with the espresso coffee until they are soaked.
Beat the egg yolks and sugar until the mixture is pale and thick. Add the mascarpone and liqueur and mix well. Beat the egg whites until they form stiff peaks and gently fold into the mascarpone mixture.
Pour into the serving dish, smooth out the top and chill for several hours. Before serving, dust the top with a layer of finely sifted cocoa powder
