Ingredients:

280g flour
3 egg yolks
1 tsp salt
1 tsp vanilla extract
160g icing sugar

Method:

Beat the egg yolks with the cold water until foamy then slowly add the sugar. Fold in the sifted dry ingredients with a spoon then gently fold-in the stiffly beaten egg whites with the vanilla extract. Pour into floured (not greased) springform cake tins and bake in an oven pre-heated to 180°C (350°F/Gas Mark 4) for 45ߝ50 minutes or until a skewer inserted into the centre of the cake comes out clean.
