Teriyaki Sauce

Teriyaki Sauce is a modern British recipe (based on a Japanese original) for a classic sauce made from a blend of soy sauce, tomato ketchup, sugar, sake and apple juice thickened with cornflour (cornstarch) which can be used as the basis for dipping sauces and marinades. Ingredients:

250ml soy sauce
5 tbsp tomato ketchup
200g sugar
250ml sake (or rice wine or dry sherry)
3 tbsp apple juice
1 pinch of freshly-ground black pepper
45g cornflour (cornstarch) whisked to a slurry in 60ml water

Method:

Combine all the ingredients (except the cornflour slurry) in a saucepan. Bring to a simmer over medium heat and cook for 10 minutes. Gradually whisk in the cornflour slurry at this point then whisk to thoroughly combine.

Continue cooking until the mixture is thickened then transfer to a sterile jar or bottle and store in the refrigerator until needed. Shake well before serving.

This can be used as a condiment, a dipping sauce and also makes an excellent base for a beef or pork marinade.
