Ingredients:

3 tbsp Beech Mast Oil
1 tbsp minced shallots
2 tbsp champagne vinegar
1 tsp fresh tarragon leaves, finely chopped
1/2 tsp Dijon mustard
pinch of sea salt
3 generous twists of black pepper

Method:

Mix all the ingredients together in a small jar with a tight-fitting lid. Shake thoroughly to mix and use immediately as a dressing.
