Tanzanian Vegetable Rice

This is a classic Tanzanian recipe for a vegetable pilau-style rice. I typically use a curry powder with a high turmeric content for this recipe so the rice turns golden yellow on cooking.
Ingredients:
1 onion, chopped
3 tbsp vegetable oil
1/2 tsp ./search.php?cat=1&ingredient=curry+powder&t=1">curry powder
210g
basmati rice
2 garlic cloves, crushed
750ml
vegetable stock, or water
120g fresh sweetcorn (sliced from the cob)
1/2 red bell pepper (or green bell pepper), chopped
1 large carrot, grated
Method:
Wash the rice under plenty of cold, running, water then set aside for 15 minutes to drain.
Heat the oil in a large saucepan and fry the onion for about 5 minutes, our until softened, but not coloured. Add the ./search.php?cat=1&ingredient=curry+powder&t=1">curry powder and the rice and stir-fry for about 10 minutes, stirring constantly, so the rice does not stick to the pan.
Add the garlic and stock (or water). Stir thoroughly to combine then bring to a boil and cook over high heat for 5 minutes. Reduce to a simmer, cover and cook for 20 minutes, or until the rice is almost tender. Scatter the sweetcorn over the top of the rice then spread the bell pepper on top of this before sprinkling over the grated carrot.
Cover tightly then steam over low heat until the rice is cooked and the vegetables are tender (about 8 minutes). Just before serving mix the rice and vegetables together with a fork.
