Tanzanian Pineapple Salad

Ingredients:

3 large pineapples, peeled, cored and cubed
80g cashew nuts
60g slivered coconut
200ml double cream
4 tbsp honey
60ml white rum (or to taste)
grated carrots and raisins, to garnish

Method:

In a dry frying pan separately toast the cashew nuts and coconut until lightly browned then set aside to cool.

In the meantime, beat the cream, honey and rum in a bowl. Arrange the pineapple cubes in a serving bowl and pour over the cream mixture. Reserve some of the toasted cashew nuts and pineapple as a garnish then mix the remainder into the pineapple and cream mixture.

Toss to combine then transfer to the refrigerator and chill for at least 60 minutes. Immediately before serving garnish with the reserved cashew nuts, coconut, grated carrots and a few raisins.

Serve immediately.
