Simba Mbili (Swahili Curry Powder)

Simba Mbili (Swahili Curry Powder) is a traditional Tanzanian recipe for a classic vegetarian curry of pigeon peas cooked in a spiced home-made coconut milk base with tomatoes and saffron. This is a recipe for the ubiquitous tinned curry powder used in Kenya, Tanzania and the Comoros islands. The interesting aspect of this curry powder is that it contains cornflour of rice powder as a thickener.

Ingredients:

2 tsp coriander seeds
2 tbsp cornflour (or ground rice)
4 tbsp ground turmeric
4 tsp black mustard seeds
12 dried piri-piri chillies
1 tsp sea salt
2 tsp ground ginger
4 tsp grated jaggery
2 tsp fennel seeds
2 tsp cumin seeds
2 cinnamon stick, halved
4 tsp garlic flakes

Method:

Place a small non-stick frying pan over medium heat. Once hot, add the coriander seeds, mustard seeds, dried chillies, fennel seeds and cinnamon stick. Toast for about 90 seconds until aromatic (but make sure they do not burn and stir frequently). Once nicely toasted turn out onto a plate and set aside to cool.

Turn the toasted spices into a spice grinder and add in the remaining spices. Process until finely powdered. Store in an air-tight jar.
