Tandoori King Prawns

Tandoori King Prawns is a modern British recipe (from British Indian Restaurants) for a classic starter of king prawns (shrimp) marinaded in a yoghurt sauce and cooked in a tandoor or under a grill (broiler). This is one of the classic British Indian Recipes (BIR) for a starter of large king prawns marinated in a blend of tangy spices and yoghurt and then cooking them in a traditional tandoor oven; though they can also be cooked on a barbecue or under a grill (broiler).

Ingredients:

16 large king prawns, peeled and deveined
250ml (1 cup) plain yoghurt
2 tbsp tandoori masala
4 tsp garlic and ginger paste
2 tsp lemon juice
2 tsp red chilli powder
Salt, to taste
2 tbsp vegetable oil
Fresh coriander leaves, chopped for garnish
Lemon wedges, for serving

Method:

Combine the yoghurt, tandoori masala, ginger paste, garlic paste, lemon juice, red chilli powder, salt, and oil in a large bowl to make the marinade.

Add the prawns to the marinade then stir to ensure they are fully coated. Cover and refrigerate for at least 2 hours (but over-night is best).

When ready to cook, pre-heat your grill (broiler) to high. Remove the prawns from the marinade then thread onto skewers (if using bamboo skewers soak in a bowl of water for 20 minutes).

Place the prawns under the grill (broiler) cook for 10-12 minutes, or until the prawns are cooked through and slightly charred, turning every 2 minutes.

Serve the tandoori king prawns hot, garnished with coriander leaves and accompanied by lemon wedges.
