Here is a really interesting and aromatic curry powder from Tamil Nadu in South India. It’s often used with chicken, but is described as a general purpose meat curry powder. It really is good and I’ll be using much more of it in my cooking.

Ingredients:

8 dried Kashmiri chillies
2 tbsp cumin seeds
2 tbsp coriander seeds
1 tbsp broken rice (raw)
1 tbsp black peppercorns
2 x 3cm (1 in) cinnamon stick
1 tbsp fennel seeds
1 tbsp split gram lentils
½ tsp whole cloves
½ tsp cardamom seeds
2 tbsp grated coconut
1 tbsp poppy seeds

Method:

Place a small non-stick pan over medium heat. Separately toast the whole spices for between 90 seconds and 2 minutes, until slightly darkened and aromatic (but be careful they do not burn). Turn out onto a plate to cool then toast the next spice.

Once all the spices have been toasted and have cooled transfer to a spice grinder and render to a powder. Store in an air-tight jar until needed. It will keep good for a month.
