Ingredients:
60ml vegetable oil
1 medium cabbage, cored and finely shredded (a chiffonade)
salt and freshly-ground black pepper, to taste
450g wide noodles
salt for drying the cabbage
Method:
Arrange the cabbage in a large dish, sprinkle plenty of salt over the top and set aside to dry for 30 minutes. At the end of this time transfer the cabbage to a cloth and wring out any excess water. Wash the cabbage in cold water to remove excess salt then wring out again.
Heat the oil in a pan and use to fry the cabbage until lightly browned then season with salt and black pepper. Meanwhile, cook the noodles in lightly-salted boiling water (about 8 minutes), until al dente then drain and shake off any excess water. Add the noodles to the cabbage and stir to combine. Serve hot.
