Tahini Pekmez (Tahini and Grape Molasses) is a traditional Turkish recipe for a classic blend of sesame seed paste and concentrated grape juice that's typically served for breakfast. Ingredients:
250ml tahini (sesame seed paste)
125ml grape molasses (this is the same as roman Defritum, basically grape juice boiled down to 1/3 of its original volume)
Method:
Place the tahini in a bowl and, whilst stirring constantly, slowly add the grape molasses.
Whisk to combine the ingredients and serve this dessert (or breakfast dish) thickly spread over Turkish bread (use French bread if no Turkish bread is available).
