Muhammara (Syrian Sweet Pepper Spread) is a traditional Syrian recipe for a classic spread made from red bell pepper combined with walnuts, live oil, tomato puree, lemon juice and garlic that's thickened with breadcrumbs and flavoured with cumin. Ingredients:
1 red bell pepper (abut 200g)
70g ground walnuts
60g fresh breadcrumbs
120ml olive oil
2 tbsp tomato purée
1 tbsp lemon juice
4 garlic cloves, mashed or grated
1/2 tsp ground cumin
salt and freshly-ground black pepper, to taste
Method:
Roast the bell pepper in an oven until the skin has blackened. Cover in a tea towel, allow to cool until it can be handled then peel and de-seed.
Chop the pepper and combine in a food processor with the remaining ingredients. Purée until smooth then turn into a serving bowl and serve as a dip, sauce, or accompaniment. This is excellent spread over toast for breakfast and can be used as a base for grilled cheese or Welsh rarebit.
