Sweet Potato Ice Cream: Classic American recipe for a classic ice cream made with sweet potato puree in a cream custard base flavoured with nutmeg and cinnamon" height="367" width="400" title="Sweet Potato Ice Cream Recipe from America.

Ingredients:

600ml double cream
240ml whole milk
150g dark brown sugar
5 egg yolks
200g sweet potato purée (cook the sweet potatoes and purée in a blender with a little milk)
1/4 tsp freshly-grated nutmeg
3/4 tsp ground cinnamon

Method:

Combine the cream, milk and brown sugar in a pan. Heat, stirring constantly, until the sugar has all dissolved and the mixture is hot. Meanwhile, briefly whisk the egg yolks in a small bowl then slowly pour in about 300ml of the cream mixture, whisking constantly, to temper the eggs. Pour the egg yolk mixture into the saucepan, whisking constantly.

Return the pan to the hob and cook over medium heat, stirring constantly, until the mixture thickens sufficiently to coat the back of a spoon (about 8 minutes). Be carefully not to allow the mixture to boil.

Strain the custard into a bowl then whisk in the sweet potato purée and the spices. Cover and refrigerate until thoroughly chilled. Transfer to an ice cram maker and freeze according to the manufacturer's instructions.

Serve topped with the toasted almonds.
