This large dumpling of sweet potatoes is a classic recipe from Monrovia, Liberia. It's a simple sweet potato and flour dumpling flavoured with those classic Liberian flavours of ginger and cinnamon.

Ingredients:

100g sugar
1 tbsp ground cinnamon
2 large sweet potatoes, grated (white would be typical but you can use other colours)
2 tbsp freshly-grated ginger
210g flour

Method:

Peel and grate the sweet potatoes into a bowl then mix in the sugars. Cover and set aside for 2 hours (this will extract the excess water from the sweet potatoes). Add the spices and then the flour before stirring to combine (if the mixture looks a little dry add some water to form a firm dough. If too watery then add a little more flour).

Grease a large piece of muslin or cheesecloth and flour it well. Add the sweet potato dough then wrap the cloth around it and tie securely with string. Place in a pan of boiling water (you can flavour this with ginger, cinnamon, lime and lemon zest if you wish) then boil for about 90 minutes or until the dumpling is firm and cooked through. Serve hot.
