Sweet Pickle Relish

Ingredients:

700g cucumbers, de-seeded and chopped
400g onions, chopped
150g green bell peppers, de-seeded and chopped
150g red bell peppers, de-seeded and chopped
50g salt
490g sugar
500ml cider vinegar
1 tbsp celery seeds
1 tbsp black mustard seeds

Method:

Combine all the vegetables in a large glass bowl and sprinkle the salt over the top. Cover with a clean tea towel and allow to stand for 2 hours.

Drain the vegetables as well as you can then place in a cloth and wring out as much of the water as you can.

Meanwhile, combine the vinegar, sugar and spices in a large stock pot. Bring to a boil then add the vegetables. Return to the boil, reduce to a simmer and cook for 10 minutes.

Using a slotted spoon transfer the vegetables to sterilized jars that have been warmed in an oven set to 110°C for 20 minutes. When he jars are almost full top-up with the vinegar mixture so that the vegetables are immersed in the vinegar. Cover the jars with vinegar-proof lids and store for at least 10 days to mature before using.
