St Vincent Curry Powder

Here is another version of a classic Caribbean curry powder, this time from Saint Vincent and the Grenadines. It's based on the classic base curry powder recipe with hot chilli powder or flakes with the addition of powdered onion and garlic with herbs So it's a little bit of a cross between curry powder, season all and jerk seasoning and can be used for all those purposes.

Ingredients:

6 tbsp ground Turmeric
2 tbsp ground Coriander seeds
1 tbsp ground Cumin
1 tbsp Garlic powder
1/2 tbsp ground Allspice
1/2 tbsp Onion powder
1 tsp scotch bonnet chilli flakes (or ground hot chillies)
1/8 tsp ground Cloves
1/4 tsp ground fenugreek seeds
1/2 tsp dried thyme
1/2 tsp dried parsley

Method:

Keep all ingredients dry and away from moisture when measuring into a very large container with a tight fitting lid that will allow the blend some room to move around. After measuring all items, cover the container and shake rattle and roll to mix ingredients together thoroughly.

Store in a cool dry place and use as your new found curry powder. Feel free to experiment with adding other dry ingredients to create your own unique blend such as ginger, cardamom, cinnamon et cetera but be sure to add in small amounts so as to complement rather than overpower the original blend.
