Süßer Hirsebrei (Sweet Millet Porridge)
Süßer Hirsebrei (Sweet Millet Porridge) is a traditional Namibian recipe for a classic dessert of millet porridge in a sweetened cream base flavoured with vanilla served with stewed fruit. Many forget that Namibia was a German colony, though in many places the German stamp can seem quite strong even today. Indeed, it was German immigrants who turned the native millet porridge or pap into a sweet dessert dish, probably inspired by the rice puddings of their homeland.
This is an extremely filling dessert dish.
Ingredients:
250g millet
250ml single cream
3 tbsp sugar
1 vanilla pod
stewed fruit, fresh berries or fruit jams, to garnish
Method:
Turn the millet into a colander and wash thoroughly under plenty of cold, running, water.
Scrape the millet into a saucepan, add 500ml water and bring to a boil. Reduce to a simmer and cook for 15 minutes then take the pan off the heat.
Split the vanilla pod in half and scrape out the seeds. Mix these together with the cream and sugar then pour into the millet mixture. Re-cover the pot and set aside to finish cooking and to cool.
Once cold, serve immediately with either stewed fruit, fresh berries or fruit jam.
