Supu ya Ndizi (Plantain Soup) is a traditional Tanzanian recipe for a classic soup of plantains pounded to a paste cooked in chicken stock. The full recipe is presented here and I hope you enjoy this classic Tanzanian version of: Plantain Soup (Supu ya Ndizi).

Ingredients:
3 green plantains, peeled (about 450g)
1.4l chicken stock or chicken broth
salt and black pepper, to taste
Method:
Peel and slice the plantains then either pound to a paste in a pestle and mortar or blitz in a food processor. Mix with 250ml of the chicken stock. Pour the remaining chicken stock into a plan and stir-in the blended plantain mixture.
Bring to a boil, cover and reduce to a simmer, allowing the mixture to cook for about 45 minutes. Season with salt and pepper and serve in soup bowls.
