Cabaceira is the Guinea-Bissau name for the fruit of the baobab tree, with its unusual powdery pulp. This drink, in various forms, is made from Guinea-Bissau north through Senegal and into Mauritania and Mali. What makes this version of the drink unique, is the addition of milk.
Ingredients:
250g powdered baobab fruit pulp
500g sugar
2l water
500ml milk
Method:
Sift the powdered baobab fruit pulp through a fine-meshed sieve (this removes any fibrous materials).
Turn the fine pulp into container and gradually work in the water, mixing carefully.
Add the sugar and stir until dissolved. Finally mix in the milk, cover and chill in the refrigerator for at least 2 hours before serving.
