Summer Berries with Warm Sabayon Glaze: A classic British dessert of summer berries in a warm egg yolk glaze (a sabayon) served in a glass garnished with mint and icing sugar.
Ingredients:
500g (4 cups) mixed summer berries
4 egg yolks
50g (1/4 cup) caster sugar
120ml (1/2 cup) liqueur (Cointreau is good)
mint leaves, to garnish
icing sugar, sifted, to garnish
Method:
Divide the fruit between four heat-proof ramekins (personally I like a mix of garden, bought and foraged fruit like: blackberries, plums, strawberries, redcurrants, cherries and grapes).
Combine the egg yolks, sugar and liqueur in a large bowl and whisk to combine. Sit this bowl over a pan of hot water (the water should be off the heat after boiling and the bottom of the bowl should be above the surface of the water). Cook, whisking constantly, until the mixture is thick, pale and fluffy.
Divide the resultant sauce between the ramekins then sit on a baking tray and place under a hot grill for between 1 and 2 minutes, or until the top is just beginning to brown.
Remove from under the grill, dust with the icing sugar and add a sprig of mint. Serve immediately.
