Sugar Mice

These sugarpaste mice are a delight. Once they were given to every child at Christmas, but they are seldom seen today. But this recipe allows you to re-create a traditional Christmas gift of yesteryear for yourselves.

Ingredients:

450g (1 lb) icing sugar
1 egg white, lightly beaten
50g (2 oz) golden syrup (corn syrup)
a few drops of pink food colouring

To Finish:
2 liquorice sticks
coloured silver balls (for the eyes)

Method:

Sift 3/4 of the icing sugar into a bowl. Add the egg white and the syrup and mix well together.

Gradually add the remaining icing sugar, kneading it in by hand to form a paste. Add a few drops of pink food colouring and knead well until the paste is smooth and evenly coloured.

Cut off a small piece of the sugarpaste and reserve for the ears. Divide the remaining paste into eight equal-sized pieces. Shape each piece into a ball then taper one end to form the nose of the mouse (leave the other end rounded). Press the mice onto a sheet of greaseproof (waxed) paper to flatten.

Shape the reserved fondant sugarpaste into 16 ears, gently pressing your thumb into them to give a rounded effect. Press the ears firmly onto the heads of the mice then press two coloured silver balls into the faces for eyes.

Cut the liquorice into lengths and insert these into the mice as tails.

Traditionally the mice are served in pairs, with their tails tied together with a bow.
