This is a traditional tea recipe from North Sudan. Cinnamon tea is one of the most popular drinks in Sudan, particularly North Sudan. It is typically a blend of black tea steeped with cinnamon sticks. It is sweetened with sugar cubes. Many drinkers like to hold a sugar cube between the teeth while drinking to sweeten the brew.
Ingredients:
3 cinnamon sticks
750ml (3 cups) water
1 tbsp black tea (Assam, or any good gunpowder tea will work well)
sugar cubes, as desired
Method:
For the strongest flavour, consider adding the cinnamon sticks to the water as it heats up. Otherwise add it to a teapot with the black tea.
Bring the water to a boil in a kettle or pan with a spout. Put the tea in a warmed teapot. Pour just off the boil water over top, cover and allow to steep a few minutes, then strain into serving cups.
