Stuffed Sardines

Ingredients:

15g fresh parsley, finely chopped
4 garlic cloves, finely chopped
12 fresh sardines, cleaned and scaled
2 tbsp lemon juice
85g plain flour
1 tsp ground cumin
salt and freshly-ground black pepper, to taste
olive oil, for brushing


Method:

Combine the parsley and garlic in a bowl and mix well. Wash the fish well, pat dry then stuff with the parsley and garlic mix. Pat any remaining mixture over the outside of the fish.

Sprinkle the sardines with lemon juice and place in a non-reactive bowl. Cover with clingfilm and set aside to marinate in the refrigerator for 1 hour.

Mix the flour and cumin together in a bowl. Season lightly with salt and black pepper, then roll the sardines in this to coat.

Brush the sardines with olive oil and cook on a barbecue over medium-hot coals for 3 to 4 minutes on each side. Serve immediately.
