Strawberry Ice Cream: Classic British recipe for an ice cream made from a milk and cream custard flavoured and coloured with strawberries.

Ingredients:

300g fresh strawberries
200g granulated sugar
2 tbsp lemon juice
200ml cold water
4 egg yolks
50g golden caster sugar
150ml whole milk
150ml double cream

Method:

Clean and hull the strawberries then quarter the fruit. Place in a blender along with the granulated sugar and water and process until smooth (add the lemon juice at this point) then pass through a fine-meshed sieve to remove the pips.

Combine the milk and cream in a saucepan. Heat gently, stirring often, until the liquids begin to boil then take off the heat.

Meanwhile combine the golden caster sugar and egg yolks in a small bowl. Whisk together until pale and creamy then slowly whisk-in the milk mixture. Continue whisking until smooth and well combined then tip the mixture back into the pan. Cook over medium heat, stirring continuously, until the custard thickens sufficiently to easily coat the back of a metal spoon. Take the custard off the heat, strain into a bowl then set aside to cool.

Once the custard has cooled stir-in the strawberry purée and whisk to combine. Pour the resultant mixture into the bowl of an ice cream machine and churn according to the manufacturer's instructions.
