Strawberry Daiquiri Cupcakes: An American recipe for a Valentine's day cupcake made from a strawberry cake mix base flavoured with lime and white rum that's topped with strawberry buttercream and fresh strawberries.
Ingredients:
1 batch (500g) copycat boxed strawberry cake mix (or 1 box [18 1/4 oz] strawberry cake mix)
2 tsp finely-grated lime zest
2 tbsp fresh lime juice
2 tbsp white rum
80ml applesauce
3 eggs
250g strawberry buttercream icing
6 fresh strawberries, quartered lengthways
strips of lime zest, to garnish
Method:
Combine the lime zest, lime juice and rum in a measuring jug then pour in water to make the volume up to 300ml.
Turn the cake mix into a bowl and beat with the lime mix, apple sauce and the eggs until you have a smooth batter.
Spoon the resultant batter into the wells of two 12-cup muffin tins that have been lined with paper cases. Fill the cups no more than 2/3 full.
Transfer to an oven pre-heated to 170°C and bake for about 16 minutes, or until golden brown on top and cooked through (a toothpick inserted into the centre of a cupcake should emerge cleanly.
Take the cupcakes out of the oven and immediately transfer to a wire rack to cool.
When cold, pipe or spread the strawberry buttercream over the top.
Garnish each cupcake with a strawberry quarter and a few threads of lime zest.
