Straußencarpaccio (Ostrich Carpaccio)

Straußencarpaccio (Ostrich Carpaccio) is a traditional Namibian recipe for a classic dish of thinly-sliced ostrich fillet served with lightly-dressed lettuce leaves that makes an excellent starter. Carpaccio is a very popular way of serving meat, particularly in the restaurants of Botswana and I was interested when I cam across this recipe from neighbouring Namibia. So interested that I had to get the recipe to share it on this site.

Ingredients:

150g ostrich fillet
1 tbsp olive oil
a few lettuce leaves
juice of 1 lemon
coarsely-crushed black pepper, to taste
salt, to taste

Method:

Wash and rinse the meat then pat dry. Wrap in clingfilm and tighten the ends to form a tight sausage shape. Set in the freezer for 1 hour to set.

After this time, cut the meat into thin slices. Drizzle the oil over four plates then brush the ostrich fillet slices with a little of the remaining oil. Arrange the meat on the plates and sit a few lettuce leaves on top.

Sprinkle with the lemon juice, season and serve. Garnish with fruit chutney and strips of bread crust.
