Sticky Guinness Chicken Wings

Sticky Guinness Chicken Wings: An Irish recipe for a snack or main dish of chicken wings coated with a sticky Guinness, shallot, soy sauce and sugar sauce, shown served with mashed potatoes.

Ingredients:

1kg chicken wings, tips trimmed and cut in two at the joint
10 shallots, peeled, chopped and pounded to a paste in a mortar
2 tbsp black peppercorns, finely crushed
generous pinch of cayenne pepper
1/8 tsp ground allspice
4 tbsp dark soya sauce
1 tbsp light soya sauce
4 tsp muscovado sugar
320ml Guinness (or other Irish stout)

Method:

Combine the pounded shallots, black peppercorns, cayenne pepper, allspice, soya sauces and sugar in a bowl. Mix well then add the chicken wing pieces, stirring them to coat in the marinade.

Cover and set aside to marinate for 20 minutes.

After this time drain off and reserve the marinade.

Heat 4 tbsp oil in a wok. When smoking, add the chicken pieces and stir-fry over high heat until nicely browned.

Pour in the reserved marinade and continue cooking, stirring constantly, until reduced and sticky.

Now pour over the Guinness and bring the mixture to a boil. Reduce to a simmer and continue cooking, stirring frequently, until the liquid has evaporated and the chicken is cooked through and coated with a black, sticky, sauce.

Either serve on its own with beer as a snack, or accompany with rice, pasta or mashed potato as a main course.
