This is a very interesting example of a traditional Victorian Plum (dried fruit) cake that is initially steamed before being oven baked.

Ingredients:

225g butter
225g brown sugar
5 eggs
225g flour
2 tsp mixed spice
15g freshly-grated nutmeg
1kg (up to 1.3kg) mixed, dried, fruit (any combination you like)
100g (or more) candied peel, chopped
120ml golden syrup
250ml brandy, sherry, cider or stout
1/4 tsp bicarbonate of soda dissolved in 1 tbsp warm water

Method:

Cream together the butter and sugar until fluffy then add the eggs, one at a time, beating thoroughly after each addition. Sift together the flour and spices in a bowl (but retain enough flour to dust the fruit). Add the flour and spice mix then beat to combine.

Clean the fruit and peel then toss with the reserved flour to coat before stirring into the cake batter along with the golden syrup, liquid and bicarbonate of soda solution. Mix thoroughly to combine then turn into a greased pudding basin. Cover with greaseproof (waxed) paper and aluminium foil and tie securely. Place in a steamer and steam for 3 1/2 hours. Turn out of the basin onto a greased baking tray, whilst still hot. Cover with foil then place in an oven pre-heated to 150°C and bake for about 90 minutes, or until nicely coloured.

Allow to cool then serve. This can be served sliced as a cake or it can be used as an alternative to traditional Christmas pudding.
