Steamed Prawns with Wolfberries is a traditional Singaporean recipe for a classic starter or snack of king prawns marinated with garlic, wolfberries, rice wine and brown sugar before being steamed and which is often served as street food. Ingredients:
10 king prawns (still in their shells)
1 garlic clove, chopped
1 tbsp dried wolfberries (goji berries)
1 tbsp Chinese rice wine (or dry sherry)
1/2 tsp brown sugar
1 tbsp chicken stock cube, crumbled
sea salt, to taste
4 tbsp water
Method:
Slit the backs of the prawns with kitchen shears then remove the vein (actually the digestive tract), wash thoroughly and pat dry.
Combine the garlic, wolfberries, rice wine, brown sugar, stock, sea salt and water in a bowl. Add the prawns and toss to combine. Cover and set aside to marinate for 15 minutes.
Turn the ingredients onto a heat-proof plate. Place in a steamer basked then set over boiling water and steam until the prawns are done (about 10 minutes). Serve immediately.
