Puiddin Ooh (Batter Pudding)

This is a simple Manx version of a steamed batter pudding that's traditionally served with a simple sweet sauce.

Ingredients:

For the pudding:
2 eggs
600ml (2 1/2 cups) of milk
250g (2 cups) flour
salt, to taste

For the Sweet Sauce:
2 tbsp of the above batter
300ml (1 1/4 cups) milk
25g (1 oz) butter
sugar, to sweeten

Method:

In a bowl, beat together the eggs, milk, flour and salt to a thick batter. Reserve 2 tbsp of this mixture for the sauce. Traditionally this was boiled in a pudding cloth wrung out in warm water and floured but you can make it in a pudding basin.

If making in a basin, pour in the batter, cover with a tight fitting lid then cover everything in a double layer of kitchen foil.

If cooking in a cloth drop into a pan of boiling water and boil for 30 minutes. If cooking in a basin, steam for 60 minutes.

For the sweet sauce, mix the 2 tbsp reserved batter with the milk and butter in a saucepan. Sweeten to taste with sugar, stir to blend then bring to a boil and cook for 1 minute.

Serve the pudding sliced and pour over the hot sauce.
