St Brigid's Oatcakes
St Brigid's Oatcakes is a traditional Irish recipe for a classic soft chewy sodabread containing oats and made with buttermilk that was traditionally served to children cut into farls (quarters). This is really a chewy soda bread that contains rolled oats in the mix and which is cooked as farls (ie quartered). Traditionally these were served to children as it was believed that their chewy texture would help strengthen the muscles of the jaw.
Ingredients:
200g uncooked rolled oats (the old-fashioned kind and not the instant cook variety)
300ml buttermilk
300g strong white bread flour, sifted
1 tsp baking soda
1/2 tsp baking powder
1 tsp salt
Method:
The day before, combine the oats and buttermilk in a small bowl. Mix well to combine then cover with clingfilm (plastic wrap) and set aside in the refrigerator over night.
The following day, remove the oat mixture from the refrigerator. In a large bowl, combine the flour, baking soda, baking powder and salt. Slowly work in the oat mixture, stirring with a wooden spoon until you have a smooth dough.
Grease a baking tray then turn the dough onto this and use your hands to form a cake-shaped loaf about 3cm thick (actually more like a bannock). Using a sharp knife cu the dough into four quarters (farls). Move the segments apart slightly then transfer to an oven pre-heated to 180°C and bake for about 30 minutes, or until the bread pieces are a light golden brown and firm to the touch.
Turn out onto a wire rack to cool. Serve with butter and jam.
