Spruce Tip Vinegar

Method:

Combine all the ingredients in a covered jar. Allow to stand at room temperature for 2 weeks, shaking the jar occasionally to allow the flavours to infuse.

After this time, strain into a sterilized bottle, stopper and store in a cool cupboard until needed. This makes an excellent vinegar for dressing green salads.
