Spinach and Apple Soup

Spinach and Apple Soup: British soup of spinach and apple puree in a vegetable stock and milk base.

Ingredients:

25g (1 oz) margarine or butter
1 small onion, chopped
25g (1 oz) wholemeal flour
600ml (2 1/2 cups) vegetable stock
450g (1 lb) spinach, stems removed and shredded
225g (1/2 lb) apple purée
280ml (1 cup + 2 tbsp) milk
pinch of nutmeg
lemon juice, to taste
salt and freshly-ground black pepper, to taste
natural yoghurt, to garnish
finely-chopped parsley, to garnish

Method:

Melt the butter in a large pan, add the onion and fry for about 5 minutes or until soft but not coloured. Scatter over the flour and mix in to form a smooth roux.

Slowly add the stock, beating the mixture until smooth, then bring to a simmer and cook for 10 minutes.

Add the spinach and cook for about 5 minutes, or until tender. Take off the heat and allow to cool slightly then mix in the apple purée. Turn the ingredients into a food processor or blender and process until smooth.

Pour back into the pan, mix in the milk then place on the heat and allow to re-heat gently.

Season to taste with salt, black pepper, nutmeg and lemon juice.

Divide the soup between warmed soup bowls, garnish with a swirl of yoghurt and finely-chopped parsley then serve.
