I love sev and typically prepare this to incorporate into trail mix as a spicy component. It’s also great served with drinks or as a nibble for Diwali.
Ingredients:
500g/1lb 2oz besan (brown chickpea) flour
1 tsp ajowan (ajwain/bishop’s weed) seeds
1 tbsp vegetable oil (plus extra for deep frying)
¼ tsp asafoetida
Salt, to taste
200ml/7fl oz water
Method:
Mix the chickpea flour (besan) with the ajowan seeds, oil, asafoetida and salt then mix in enough of the water to form a sticky dough. Transfer this to a piping bag fitted with a thin nozzle.
Heat the oil in a saucepan or wok. When hot press the dough through the nozzle in the form of noodles into the pan and fry lightly on both sides. Drain well on kitchen paper and cool allow to cool completely before storing.
In an air-tight tin this will keep for up to a fortnight.
