Spicy Potatoes: An Irish recipe for an accompaniment of potatoes cooked in a spiced tomato and coconut milk base with onion.
Ingredients:
500g floury potatoes, cubed
2 tbsp oil
1 onion, chopped
3 garlic cloves, finely chopped
1 fresh red chilli, finely chopped
2 tsp cumin seeds, lightly crushed
60g creamed coconut, finely chopped
150ml boiling water
400g tin of chopped tomatoes
salt, to taste
squeeze of lemon juice
sugar, to taste
fresh coriander or parsley sprigs, to garnish
Method:
Soak the potatoes in water for 10 minutes. Drain and dry on paper towels.
Heat the oil in a large saucepan, add the onion along with the garlic and chilli. Fry gently for about 5 minutes, or until the onions are softened but not coloured. Increase the heat at this point then add the cumin and stir-fry for 1 minute, or until fragrant.
In the meantime, stir the creamed coconut into the boiling water to dissolve. Stir the potatoes in the onion mixture to coat then add the coconut and the tomatoes.
Bring to a simmer and cook for 25 minutes, or until the potatoes are tender. Season to taste with the salt, lemon juice and sugar.
Serve garnished with the coriander or parsley. Serve immediately.
