Spicy Plum and Shiraz Relish: A British recipe for an autumnal or Christmas relish of plums in a red wine, sugar and vinegar base that goes wonderfully well with cheese.
Ingredients:
250ml Shiraz (Syrah) red wine
110g brown sugar
125ml red wine vinegar
1/2 red onion, sliced thinly
2 star anise
12 red plums, pitted and quartered
salt and freshly-ground black pepper, to taste
bread and mature Cheddar cheese, to serve
Method:
Combine the wine, sugar, vinegar, onion and star anise in a saucepan. Season liberally with salt and freshly-ground black pepper then bring to a boil. Reduce to a rolling simmer and cook for 5 minutes, or until the volume of liquid has reduced by half.
Add the plums and continue to simmer, stirring occasionally, for about 14 minutes, or until the plum juices have thickened and the plums are very soft.
Spoon the hot relish into sterilized jars and seal securely. Set aside to cool.
This relish will keep in the refrigerator for up to two weeks. As well as being excellent with cheese it also makes a great accompaniment to left-over Christmas or Thanksgiving turkey or Easter ham.
