Spiced Crab Apples

This is a crab apple preserve that makes the most of these fruit's tartness. They make an excellent accompaniment to pork, wild boar duck and goose.

Method:

Place the crab apples in a pan. Add 900ml water and the lemon zest then bring to a boil. Reduce the heat to a gentle simmer and cook until just tender (about 20 minutes). Take off the heat, gently lift the fruit out with a slotted spoon and reserve the cooking liquid.

Tie the spices in a piece of muslin and add to a pan along with the vinegar, sugar and 900ml of the apple cooking liquid. Heat gently until the sugar has dissolved then bring to a boil and and boil for 1 minute before gently adding the apples. Reduce to a simmer and cook gently for about 35 minutes (remove the spices after 30 minutes), or until the sugar has reduced so that it coats the back of a spoon.

Pack the fruit into jars that have been sterilized and warmed in an oven set to 100°C for 10 minutes then pour the syrup over the top and seal securely with vinegar-proof lids. Allow to mature for at least 3 weeks before using.
