These are the Spanish version of French fries (basically thin chips). What makes them special is that they are always fried in good quality olive oil. Once you taste them, you will be hooked.

Ingredients


750g potatoes (Belle de Fontenay are good)
good-quality olive oil, for frying
salt, to season

Method:

Peel the potatoes, then cut into 6mm thick slices. Cut these slices into 6mm thick fingers. Rinse well in plenty of cold water to remove the excess starch. Drain and pat dry on kitchen paper.

Fill a deep fryer with good-quality olive oil. Heat to 180°C then, working in batches, add the potatoes and fry until golden brown. Drain on kitchen paper as you cook the next batch. Keep warm in the oven until all the fries are ready.

Serve seasoned with salt.
