This recipe is Chinese in origin and shows the Chinese influence on Nauruan cuisine.
Ingredients:
340g tin of spam, diced
2 tbsp vegetable oil, divided
2 eggs, beaten
4 tbsp carrots, diced (optional)
4 tbsp spring onions, chopped
4 tbsp frozen peas, thawed
4 tbsp red bell pepper, chopped
500g cooked rice
3 tbsp soy sauce
Method:
Place a wok or large pan over medium heat. Once hot add 1 tbsp of the oil, add the eggs and scramble, stirring, until they reach the desired done-ness.
Remove from the wok and set aside on a plate.
In same wok or pan, heat remaining 1 tbsp oil. Cook the spam, carrots, spring onions, and bell pepper for 4 minutes or until vegetables are tender.
Stir in rice and egg. Sprinkle with soy sauce. Stir-fry until heated thoroughly.
Turn onto a warmed serving dish and serve garnished with additional spring onion.
