These are classic German egg-based noodles (also known as Spatzle) that are flavoured with nutmeg and are first boiled before being fried in butter and served.
Ingredients:
420g unbleached flour
1 tsp salt
1/4 tsp freshly-grated nutmeg
4 large eggs, beaten
120ml water (or more, as needed)
60ml butter
Method:
Sift together the flour, salt and nutmeg into a bowl. Form a well in the centre and add the eggs and 120ml water. Beat the mixture with a wooden spoon to combine then add just enough further water to give you a slightly tacky, yet stiff and elastic dough.
If you have a spaetzle machine use that, otherwise turn the dough into a colander with medium-sized holes then press through with the back of a spoon into a pot of boiling salted water. Once all the dough is cooking continue boiling for about 5 minutes, or until the noodles rise to the surface of the liquid. Lift out with a slotted spoon and drain on paper towels.
Melt your butter in a pan, add the cooked noodles and fry until browned all over then serve garnished with chopped parsley.
