Southern Succotash
Southern Succotash is a traditional American recipe (from Southern USA) for a version of the classic native dish of lima beans, tomatoes, sweetcorn and bell peppers that contains bacon or pork, stock and okra and which is commonly served for Thanksgiving. One of the features of Southern-style Succotash is the inclusion of pork products; whether that be ham hocks, ham or bacon, as in this recipe.
Ingredients:
3 bacon rashers, chopped
1 small onion, minced
1 green bell pepper cored, de-seeded and minced
100g frozen lima beans
350g fresh sweetcorn or frozen corn kernels thawed and drained if frozen
1 small tomato cored and chopped
1 tsp sugar
1 tsp sea salt (or to taste)
1 tsp freshly-ground black pepper
125ml tomato sauce
125ml water or chicken stock
100g young okra pods stem ends trimmed and sliced 5mm thick
Method:
Place a medium-sized saucepan over medium heat. Add the bacon pieces, and cook until crisp (about 3 to 4 minutes), then remove them from the pan with a slotted spoon and set aside on plate.
Add the onion and bell pepper to the bacon grease left in the pan and cook for about 3 minutes, or until beginning to soften. Reduce the heat to medium low and stir in the lima beans, corn kernels, tomato, sugar, salt and black pepper.
At this point stir in the tomato sauce and water (or chicken stock), bring to a simmer, cover the pan and cook for 15 minutes.
Stir in the okra, return to a simmer and cook for 10 minutes more. Finally stir in the reserved bacon and serve.
