Souppa Trachanás (Trachanas Soup) is a traditional Cypriot recipe for a classic soup of pasta and Halloumi cheese in a chicken broth and lemon juice base, which is the national soup of Cyprus. This is the traditional soup of Cyprus. The trachanas itself is a blend of crushed wheat and yoghurt which, when cooked, becomes a thick paste. Trachanas itself is served partially dried and sliced into long, thin, strips. These are spread out and then dried in the sun for 4 to 5 days until dry. The pieces of trachanas are then stored in glass jars until needed. Trachanas can be bought from Cypriot grocery stores.
Ingredients:
1.5l chicken stock
100g Halloumi cheese, diced
500g trachanas (see above)
120ml lemon juice
salt and freshly-ground black pepper, to taste
Method:
Wash the trachanas, place in a bowl, cover with water and set aside to soak for 60 minutes.
After this time, drain the strips the place in a pan with the cold chicken broth. Cook very gently over low heat for 60 minutes, or until you have a thick soup base. Whilst cooking stir every 10 minutes or so to ensure that it does not catch or burn on its base.
Five minutes before it's due to be served stir in the lemon juice and the Halloumi cheese. Serve hot, ladled into warmed soup bowls.
