In the Caribbean, the flowers of the hibiscus plant are known as 'sorrel'. In Senegal this is known as bissap and in Europe it's often referred to as 'roselle'. In effect this is the Bahamian equivalent of Senegalese (and West African) Jus de Bissap.

Ingredients:

2l water
450g sorrel flowers (bissap)
1/2 tsp mixed spice (pumpkin pie spice)
5 tbsp (heaped) sugar

Method:

Place the sorrel flowers in the water then mix in the spice, cover and set aside to steep in the refrigerator for at least 24 hours.

Strain, stir-in the sugar until dissolved then chill and serve over ice.
