Sopa di Plátano Verde (Cuban Green Plantain Soup): Classic Cuban recipe for a vegetarian soup of fried green plantains with vegetable stock, onion, spices and vegetables.

Ingredients:

600ml vegetable stock (or water)
1 large, unripe (green) plantain (use 2 plantain if you are not adding other vegetables)
1 onion, sliced and fried
optional vegetables (eg 1/2 sweet potato, carrot, chickpeas, potato, celery, shredded cabbage) [optional]
ground cumin, salt and freshly-ground black pepper, to taste
lemon slices, to serve

Method:

Peel the plantain (easiest done if you slice the peel lengthways two or three times) then cut into 2cm slices (or very thin strips). Heat oil in a pan or wok until hot and use this to fry the plantain until crisp. Remove with a slotted spoon and set aside on kitchen paper to drain.

Heat the stock in a saucepan and when it starts to boil add the vegetables (omit if you want a pure plantain soup) and cook for about 20 minutes, or until tender.

If you are using plantain chunks mash in a bowl and add 200ml of the stock to form a smooth paste. Turn this back into the stock pot. If you are using plantain chips then fry until crisp and pulverize to a powder in a mortar (or blender) then add a little stock and form a paste. Again turn the paste back into the stock pan.

Bring to a simmer, divide between warmed soup plates then garnish with fried onion and serve accompanied by lemon slices.
