Ingredients:

1.5l water
2 tsp salt
1/2 tsp black pepper
3 large potatoes, cut into chunks
2 large onions, cut into chunks
450g fresh string beans, cut diagonally into thin slices

Method:

Bring 1.5l water to the boil then add the salt, pepper, potatoes, tomatoes and onions and simmer for 30 minutes. Allow to cool and puree in a food processor then return to the pot add the string beans and simmer for 10 minutes, until the beans are tender.

Adjust the seasoning to taste and serve ladled into bowls.
