Shaah is the classic Somali version of chai or spiced tea. It differs from Indian or Kenyan chai in that black pepper is typically not added and the milk is added after the tea is poured (this can be fresh milk or powdered milk). It is also frequently drunk black, which I prefer. Traditionally it's made with shaah tea blend, but a decent black tea (like Assam) also works well. The amount of sugar is the typical amount to give the sweetness that the Somalis like. You can adjust to your own taste, or omit completely if you prefer.
Ingredients:
1l freshly-boiled water
2 tbsp black loose-leaf tea or two tea bags
50g sugar (I like brown)
1/2 tsp freshly-grated
nutmeg
2 crushed
cardamom pods
5 cloves, crushed
3cm piece of
cinnamon, crushed
Method:
Warm your teapot with hot water. Pour this out then add your tea and spices to the pot. Pour over 1l just-boiled water then
Place all the ingredients in the bottom of a teapot and cover with boiling water. Allow to steep for 20-30 minutes then stir in the sugar until dissolved. Strain the mixture into a jug (this prevents over-stewin).
Pour milk into each cup (optional), add the strained tea and serve.
